ChileRio’s secret weapon – a very powerful one indeed – is their Executive Chef, George Abeyta. Chef Abeyta has been one of New Mexico’s premiere chef’s since 1969. His experience, talent and skill are unmatched when it comes to producing quality, extremely flavorful, New Mexican food. – from recipes that are uniquely his own. More importantly, Chef Abeyta has been affiliated with the owners of ChileRio for decades. This means that ChileRio won’t just start out strong and then eventually fade like so many other startup restaurants. This is great news for those of you who can’t just jump in your car and a few minutes later arrive at ChileRio. If your visit to Albuquerque is scheduled for sometime in the future, you can look forward to your own great experience as well – whenever you get here.
Menu items will include a variety of tasty fare. Such items include:
Yucatan Rotisserie Half Chicken, Carne Adovada and Steak Rio. Other staples will include Layered Enchiladas, Burritos, and Chimichangas. Each of these orders is prepared with unique touches and flavors created exclusively for ChileRio by Chef Abeyta.
Regardless of what you decide to order, you will not be disappointed. Two items you might overlook, but I would HIGHLY recommend you try are:
The Queso Blanco (a white cheese sauce) – the BEST I have ever tasted.
Table Side Guacamole – made fresh at your table. It’s very interesting to watch, and will make you smile the second you sample it.
Another exciting feature at ChileRio is their weekend brunch offered on Saturdays and Sundays starting at 11:00am. The ChileRio Brunch will include 8 different breakfast items including Chef Abeyta’s classic Huevos Rancheros and Huevos Mexicanos.
You might be wondering at this point what I meant by saying you will leave ChileRio with stories to tell. Upon entering this chic, classy establishment, you will notice that it’s part family-friendly restaurant, part sports bar, and part art museum – all in one. Owners-Jeannine, Sharon and Theresa want your experience at ChileRio to be an extraordinary one. ChileRio is a testament to their vision.
As you can see in the slide show, there is virtually nowhere in ChileRio that doesn’t have something interesting to see and/or experience. For example, the amazing glass mosaics that run the length of the bar were created from 500 Tequila bottles given to ChileRio by friends and other restaurant owners. Each of these mosaics is a true work of art – created by Salvador Equihua. You will find it difficult to leave without admiring each of these wonderful works of art or perhaps taking a few pictures of them.
In addition, each of the table top designs (using countless bottle caps) were created by the children of the ChileRio families. It took ten days of tedious layout and design followed by the children gluing each bottle cap to the tables one by one. You will feel the love and commitment that went into each as you sit and read the brand names on each cap.
The decor, design, and menu selections were each chosen and agreed to by the families of the owners. Their concept is to make ChileRio a true reflection of New Mexico and a place where they would want to bring their families. Their vision is an on-going one. They are excited about a continued evolution which will insure that ChileRio doesn’t become complacent or stagnant.
